1. Get a wiki, like this one, and use it for your digital portfolio.  Wikispaces and JotSpot both offer free wikis.
2. Use VoiceThread (free), Jing (free), or Camtasia Studio (free for 30 days) + a microphone + optionally a graphics tablet to create mathcasts with your own voice and writing.  Learn more about how to do this here.
